  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cornstarch

Optional for flavor:

  • ½ teaspoon xanthan gum (if your flour blend doesn’t contain it)
  • 1 teaspoon vanilla powder (for extra flavor)

To Store:

To Make a Basic Vanilla Cake (one 8- or 9-inch round)

Wet Ingredients:

  • 1 cup milk (dairy or non-dairy)
  • ½ cup vegetable oil or melted butter
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 batch gluten-free cake mix (from above)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line your cake pan.
  2. Mix wet ingredients: In a large bowl, whisk together milk, oil (or butter), eggs, and vanilla.
  3. Add cake mix: Add the prepared gluten-free cake mix to the wet ingredients and mix until smooth (about 1–2 minutes). Don’t overmix!
  4. Bake: Pour batter into the pan and bake for 25–35 minutes, or until a toothpick comes out clean.
  5. Cool: Let cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
